Just in case you ever wondered what almost 9,000 lbs of meat 🥩 looks like…

Yesterday we received a BULK order from our friends at ShopRite in Southbury including 1000 packages of chicken, 300 pork chops, ground turkey, sausage and hot dogs totaling a whopping 8,809 lbs for the BARGAIN price of $9,000.

It looks like A LOT of food, right? And it IS! It’ll also find homes within a span of 2-3 weeks because that’s what happens when you’re providing meals to over 150 families every week.

With how busy the food bank’s been and how challenging it’s been to keep our shelves stocked, we’re so GRATEFUL for the Valley Community Foundation Basic Needs Grant that allowed us to purchase all this fresh protein for our neighbors.

Meet Beth!

Have you ever heard the expression about wanting something done right?

Well, those people haven’t met Beth. She is an EXPERT LEVEL task manager. She knows the ins and outs of every piece of the food bank and can (and will!) step into any role to keep things rolling.

Beth is the person you call when you want to know the best way to do something, you need something done correctly, or need someone who’s not afraid to be in charge.

Need nonperishables bagged for 1,000 families for Thanksgiving? No sweat.

Need someone to do a news interview on flood response. Completely covered.

Need someone to step in and run the ENTIRE OPERATION as an interim director. Been there. Done that too.

The only thing more impressive than Beth’s competence is her enormous heart. She cares SO MUCH. She’s EVERYONE’s mom.

Fun Facts about Beth:
🦃 She’s spent time as both a turkey and hotdog to support the food bank
🍗 She loves "meetings" with our volunteer crew at pub 67
🌱 She’s an avid gardener who has helped grow and maintain the community garden at the Little Free Pantry on Skokorat as both a mentor and friend
❤️ She loves canning and makes her own sausage
☀️ Her happy place unwinding on the beach and soaking up the sun

“Where did all this food come from?”

It’s a questions we’ve heard a bunch 🍌 at POP UP shopping the past few weeks.

The short answer is LOTS OF PLACES.

The longer explanation involves the process of FOOD RECOVERY. Thanks to our partnerships with CT FoodShare and Food Rescue US, every week we pick up donations from local grocers including produce, prepared foods, bakery items, frozen foods, dairy, and sometimes even meat. Some of these items we can freeze and keep for our regular shoppers, however there are lots of items- especially produce- that need to be used within the next few days.

When holidays happen, many food banks aren’t able to pick up their recovery runs because they’re not open or light on volunteers. While we’ve also technically been “closed”, we still picked up because we really LOVE inviting our community in for POP UP shopping.

Given we were one of the only food banks collecting, we received MUCH higher volumes of food than usual. So much, the food bank was completely FILLED with perishable items that were completely edible but wouldn’t be by our next shopping shift. That’s when we asked for YOUR help getting it to tables.

Did you know that roughly 40% of food is wasted? This is not only bad for the environment, but EXPENSIVE because food waste is often wet and heavy.

Did you also know that roughly 40% of families in our state are struggling to feed their families?

FOOD RECOVERY is a way to help our neighbors and our environment where EVERYONE wins. The grocers save money, we supply food at zero cost, and our community receives access food that they might not otherwise.

Not to mention, there’s no party like a produce party. 🎉

Huge thanks again to EVERYONE who has been a part of moving food through through the SOFB. We’re only able to do what we do because of YOU. We appreciate you and are looking forward to another year of making MAGIC✨ together.

What does getting 5,600 lbs of food to tables in a single day look like?

It looks like A LOT of food. The kind of volume that makes you not want to look at any more food after you’re done moving it.

It looks like A LOT of dedicated volunteers, the kind who love their neighbors so fiercely that they show up to move the aforementioned food, day in and out, expecting nothing in return.

It looks like A LOT of community members gathering to collect food for themselves, their families, and their people. They take the abundance and get it to places we can’t reach, spreading kindness to both individuals and organizations.

Above all, it looks like A LOT of behind the scenes logistics and relationships, A LOT of coordination, and A LOT of TEAMWORK. There are SO MANY moving parts and it takes ALL of them to make this kind of MAGIC✨ happen.

Thank YOU for being a part of it. Whether you are a community partner, volunteer, supporter, visitor, or all of the above, you are an important part of our SOFB family. We appreciate you and LOVE spreading food joy with you.

Meet Our Staff

Executive Director

Kristina Walton

Kristina became executive director of the food bank in 2024 and has worked alongside dedicated staff and volunteers to expand the hours and offerings available. Her passion is making sure all our neighbors have their needs met, including feeling seen, heard, and loved. When she is not at the food bank or in the community advocating for her neighbors, Kristina enjoys spending time with her husband Ty and 5 children who she steward's the Oxford Neighbor to Neighbor Pantry with out of their home.

Her super power is: Creating MAGIC

Joslynn Hernandez

Joslynn joined our team as Operations Manager in 2025 after volunteering countless hours. She has a deep passion for helping others and brings valuable experience from TEAM Inc, Bridgeport Rescue Mission, and the Seymour Pumpkin Festival. Her favorite part about the Food Bank is meeting "wonderful people in our community", including all our awesome volunteers.

Her super power is: Not just remaining calm during the storm, but friendly and helpful.
